Keto Cheesecake⁠
Ingredients:⁠
200g skinless hazelnuts⁠
75g butter⁠
For the cheesecake:⁠
300ml full-fat sour cream⁠
600g full-fat cream cheese⁠
2 tbsp powdered sweetener - (erythritol)⁠
3 large eggs⁠
6 large egg yolks⁠
1 tbsp lemon juice⁠
1 tsp vanilla extract⁠
For the blueberry compote:⁠
400g blueberries⁠
1 tsp powdered sweetener - (erythritol)⁠
1 tbsp lemon juice⁠
⁠
Steps:⁠
1. Start by making the base: Pre-heat the oven to 180 C / 160 C fan. Place the hazelnuts on a baking tray and place into the oven. Bake for 8 - 10 minutes, until the hazelnuts smell toasted and are starting to turn golden. Add to a food processor and blitz until a fine crumb is formed- be careful not to over blitz though as you don’t want to make nut-butter. ⁠
2. Melt the butter over a medium heat until slightly brown and nutty smelling then tip into the food processor and pulse to combine.⁠
3. Press the toasted crust into a 23cm spring form tin lined with a circle of greaseproof paper and smooth out with your hands or the back of a glass, then bake for 8 minutes.⁠
4. Remove the crust from the oven and allow to cool whilst you get on with making the cheesecake filling.⁠

Cockroach Donuts⁠⠀

1 can pre-made biscuit dough ⁠⠀
1 cup melted chocolate⁠⠀
Caramel chews ⁠⠀
Black food coloring ⁠⠀

Steps:⁠⠀
1. Add sugar, cornstarch and milk to a large saucepan over medium heat and mix until smooth. Stir constantly until it begins to thicken. Reduce heat and continue to cook for about 2 minutes. ⁠⠀
2. Remove from heat and add about 1 tablespoon of milk mixture to eggs, whisking until smooth. Slowly add 2 more tablespoons and pour egg mixture back into saucepan. Return to medium heat and bring to a boil, stirring until mixture thickens, about 2 minutes.⁠⠀
3. Remove from heat and add butter and vanilla and transfer to a bowl. Place plastic wrap directly onto the custard and place in fridge to chill.⁠⠀
4. Preheat oil in a Dutch oven to 350 degrees.⁠⠀
5. Open biscuit dough and separate all of the biscuit rounds into 2 pieces. Cut half of the rounds in half. Add a fingertip of water to the tops of the rounds and stick on the halves. Use a knife to score a thin line at the bottom of the dough half. Use remaining dough to roll out into thin strips. ⁠⠀
6. Add dough to hot oil, working in batches until golden, and set aside on a cooling rack. Add dough strips and fry until golden and remove to cooling rack.⁠⠀
7. Add custard to a piping bag and pipe into fried donuts. Dip the tips of the donuts into melted chocolate. Stretch caramel into thin strips and stick on the back of the donuts. Using a small paint brush, paint food coloring stripes in between caramel. Stick fried strips into donuts, making legs and antennas. ⁠⠀

Ingredients:⁠
1 jar strawberry jam⁠
1 tbsp instant yeast - 2 x sachets⁠
250ml warm milk ⁠
65g granulated sugar⁠
115g butter, well softened⁠
1 tsp salt⁠
2 large eggs, room temperature⁠
Pink food colouring ⁠
580g plain flour⁠
Black sesame seeds⁠
⁠
Steps:⁠
1. Spoon the jam into 10 holes on an ice cube tray and leave to freeze for at least 4 hours. ⁠
2. In the bowl of a stand mixer, add the yeast and milk. ⁠
3. Stir and leave for 5 minutes until you can see bubbles forming in the mixture. ⁠
4. Add the sugar, butter and eggs, beat in until well mixed then begin to add the flour - about 50 grams at a time to start - and salt. ⁠
5. Add the flour, about 50 grams at a time, mixing until incorporated. ⁠
6. The dough will be shaggy and still sticky. ⁠
7. Add the pink food colouring to get a light pink colour and then leave the dough to knead on a medium speed for about 4 - 5 minutes until smooth and elastic. ⁠
8. Place the dough into a greased bowl, cover and let rise for 1 hour or until doubled in size. ⁠
9. The length of time needed to rise will depend on how warm the room is. ⁠
10. When dough is risen, punch dough down with and cut into pieces weighing roughly 85 g. ⁠
11. Reserve 2 of the pieces of dough for making the ears and noses of the pigs. ⁠
12. Flatten the remaining into discs and remove the jam from the freezer. ⁠
13. Place a frozen jam cube in the centre of a disc and bring in the edges to make a ball shape. Repeat with all the dough and jam.⁠
14. To make the ears take two small balls of dough and attach them into the main dough ball by dampening the dough slightly. Shape with your index figure and thumb, to make the small ball look like an ear.⁠
15. Do the same with the nose, but round it to a nose shape and poke two holes in the small ball with a floured cocktail stick.⁠
16. Preheat oven to 200 C / 180 C fan.⁠
17. Attach 2 sesame seeds for eyes by dampening the dough where you’ll place the sesame seeds slightly with water then place into the oven to cook for 20 - 25 minutes.⁠
18. Remove from the oven and allow to cool for 15 minutes before serving as the jam will be hot. ⁠

A Breakfast That'll Make You Want to Rise & Shine 

Ingredients
For the honey glaze:
1/4 cup butter, room temperature
1/2 cup brown sugar
1 cup honey
1/4 teaspoon mustard powder
For the buns:
1-2 tablespoons oil
1 pound breakfast sausage, casings removed
Salt and pepper to taste
1 roll of pizza dough (about a pound)
1 1/2 cups cheddar cheese
Chopped scallions for garnish

Steps
1. Preheat oven to 375°F and grease a baking dish.
In a bowl, beat butter, brown sugar, honey and mustard powder together. Set aside.
2. Heat a large skillet, drizzle with a touch of oil, and cook breakfast sausage until brown. Season with salt and pepper. Set aside to cool slightly.
3. Unroll pizza dough and, leaving about a 1/2-inch border, slather with 1/4 cup of the glaze, sprinkle with 1/2 cup of cheese, add sausage and another 1/2 cup of cheese. Roll from one long side to the other.
Chill for 5-10 minutes in the freezer before cutting, seam side down, into 1-2 inch pieces. Pour remaining glaze on the bottom of prepared pan and pop 'buns'onto the glaze, cut side down.
4. Cover with foil and bake for 30 minutes, then remove foil and bake for another 20-30 minutes. 
5. Sprinkle with more cheese if desired.
6. Cool slightly before flipping over onto a plate.

Matcha ice cream⁠
Matcha shake:⁠
1/2 cup white chocolate⁠
1 box Alfort matcha biscuits, crushed (reserve a couple to garnish)⁠
1/2 cup milk⁠
1 tablespoon matcha powder⁠
3/4 cup matcha ice cream⁠

Steps⁠
1. Make the marshmallows:⁠
2. In a bowl, whisk egg whites until stiff peaks form. Add half the sugar, stir until combined, then add the other half and stir until combined. Add the gelatin dissolved in hot water, and mix to combine. Stir in vanilla. Pour mixture into a baking dish sprinkled with cornstarch, and refrigerate until hardened.⁠
3. Using a Mason jar lid or a large cookie cutter, cut out marshmallow rounds. Sandwich ice cream between two marshmallows and place in freezer.⁠
4. Dip the lip of a Mason jar into the melted white chocolate, then into the crushed biscuits. Set aside.⁠
5. In a blender, blend milk, matcha powder and matcha ice cream.⁠
6. Pour milkshake into Mason jar and top with marshmallow sandwich. Top with additional matcha treats, then scorch before serving.⁠

Nutella-Stuffed Chocolate Chip Pizookie⁠
Ingredients:⁠
1 cup unsalted butter, softened⁠
1 cup white sugar⁠
1 cup light brown sugar⁠
2 teaspoons vanilla extract⁠
2 large eggs⁠
3 cups all purpose flour⁠
1 teaspoon baking soda⁠
½ teaspoon baking powder⁠
1 teaspoon sea salt⁠
1½ cups chocolate chips (or chunks or chopped chocolate)⁠
½ cup Nutella⁠
⁠
Steps:⁠
1. Scoop Nutella into balls on wax paper and freeze.⁠
2. Preheat oven to 350 degrees. ⁠
3. In a separate bowl mix flour, baking soda, salt, baking powder. Set aside.⁠
4. Cream together softened butter and sugars until combined.⁠
5. Beat in eggs and vanilla until fluffy.⁠
6. Mix in the dry ingredients until combined.⁠
7. Add 1½ cups chocolate chunks and mix well.⁠
8. Spread half of the dough mixture into a 12-inch cast iron skillet. Sprinkle in the nutella, then cover with the remaining dough mixture. Bake for 20 mins, covered in foil, then uncover and bake for an additional 10 minutes. (The baking time will depend on the depth of your skillet. If you are using a 10-inch, it will cook longer than if you are using a 12 inch. Watch for the sides to get golden brown and slightly crispy)⁠

INGREDIENTES
• 300 g Pollo (asado o cocido)
• 50 g Aceite de oliva virgen extra.
• 30 g Cebolla
• 170 g Harina
• Pollo (asado o cocido)
• 700 g Leche
• 80 g Caldo de ave
• 2 pizca Sal
• 2 pizca Pimienta
• Huevo batido
• Pan rallado
• Aceite de freír.

1. Pica el pollo.
2. Calienta el aceite de oliva e incorpora la cebolla.
3. Añade la harina y remueve.
4. Incorpora la mitad del pollo, la leche y el caldo. Salpimienta y sofríe removiendo unos 8 minutos.
5. Añade la otra mitad del pollo y rectifica de sal.
6. Vierte la masa en una fuente de 2 y 3 cm de grosor y deja enfriar completamente (unas 2 o 2 horas y media).
Forma las croquetas con 2 cucharas, reboza en huevo y luego en pan rallado, y fríe en abundante aceite bien caliente.
